To mark the International Quinoa Consumption Day, the world’s largest Phisara was prepared in Potosí, enough to serve over half a thousand diners who gathered yesterday at the Multipurpose Fairground on Sevilla Avenue.

Made with dozens of sacks of ingredients, the dish aims to comply with national regulations promoting the consumption of the golden grain.

From yesterday through today, over 150 exhibitors—including producers, quinoa processors, and sellers of products and by-products—were present at the third edition of the fair, which seeks to promote consumption of the golden grain produced in the Potosí region.

The Secretary of Agricultural Development, Genaro Méndez, emphasized the importance of encouraging consumption of this food, based on Ministerial Resolution 160 dated July 5, 2022.

Since that year, Bolivia has aimed to promote domestic consumption of the crop every July 7, as well as to highlight the ecological importance of this cultivation.

Despite the fact that Potosí produces tons of quinoa, it is not a preferred food among many families, which is why the promotion of this highly nutritious golden grain is being encouraged.

Recipe for an exquisite “PHISARA DE QUINOA” 🇧🇴😋🍝
Ingredients

  • 200g quinoa
  • 100g peeled fava beans
  • 50g green onion
  • 150g jerky
  • 5 pcs small potatoes
  • Salt and pepper to taste
  • Quesillo (fresh cheese)
    Preparation:
    Bring 1 liter of water to a boil in a pot.
    Meanwhile, toast the quinoa for a few minutes and add it to the boiling water, but still without salt.
    Add the salt before the quinoa bursts.
    In another pot, cook the potato, onion, and fava beans. Once cooked, let everything rest. In a pan, fry the shredded jerky.
    When the quinoa is cooked, mix everything together and serve with a quesillo (fresh cheese).
