Founded in 2021, La Rufina has managed to position itself on the culinary scene through a focus on local ingredients, innovative techniques, and a dining experience that captivates those who visit.

The selection of La Rufina comes at a crucial moment for the Bolivian economy. With the growing shortage of dollars in the country, the orange economy and the gastronomic boom emerge as viable solutions to attract tourism and investments. High-level gastronomy in Bolivia, especially in La Paz, has proven to be a growing industry that not only generates employment and local development but also projects Bolivian culture to the world.

GASTRONOMIC DESTINATION

50 Best Discovery is a platform that selects restaurants based on recommendations from sector experts and international travelers, granting an unparalleled level of validation and prestige. In November of last year, an agreement between the local gastronomic movement and the Municipality set the goal of positioning La Paz as a leading Gastronomic Tourism Destination in Latin America.

In recent years, the city has gained global recognition as a gastronomic destination for its authenticity and flavors, recognized by international content platforms like Netflix, National Geographic, and CNN, which have highlighted its culinary richness on screens around the world.

“The inclusion of La Rufina in 50 Best Discovery is great news, not only for us but for the culinary movement of La Paz and Bolivia’s image as a tourist destination with a vital, authentic culture that deserves to be known,” said Veneros.

There is something magical about La Rufina: not only for its deeply satisfying traditional menu but also for the fact that this small La Paz restaurant is owned by a woman and celebrates the soul and love put into Bolivian street food. And it’s not just street food; the cuisine is surprisingly sophisticated and modern in its touch and flavor. The ingredients are all native to the country, a detail the owner, Dennis Llusco, is inherently proud of.

Born on the shores of Lake Titicaca, Llusco was raised with a strong sense of good taste. She worked in the best kitchens in Bolivia and Brazil before realizing she wanted her own. This is where La Rufina comes in: a variation of everyday dishes but with quite an artisanal interpretation. Fry lovers will adore the stuffed items, while the more adventurous should try the rib and peanut consommé or the beef heart with seven types of chili peppers.
