Federico Guardia Rück, Chuquisaca chef and culinary researcher, couldn’t contain his excitement when he received the news: his dedication to Bolivian cuisine and his passion for reviving ancestral flavors have earned him the title of Special Ambassador of Gastronomic Tourism by the United Nations.

The young chef, known for his meticulous attention to detail, has transformed simple ingredients into true emblems of Bolivian culinary identity.

I remember the first time I spoke with him. Federico took his time to explain to me, with an almost reverential calm, how ckocko de pollo, one of Sucre’s traditional dishes, represents more than just a meal; it’s a story, an appropriation of a universal delight adapted to the Bolivian palate.

“It’s our way of embracing the world, but with our own flavor,” he said with a soft, passionate smile. He not only focuses on preparation but also on the symbolic value of each ingredient. He told me about the Chuquisaca chili pepper, which enhances dishes with its sweetness, spiciness, or mild heat, rescued from obscurity to become a culinary gem.

His face lit up as he mentioned how, with the loss of access to the sea, Bolivia also lost certain ingredients that defined its cuisine, but that gap was filled with meats like pork, lamb, rabbit, and especially chicken. “We have learned to replace what the sea took from us, adapting our recipes with the flavors of the land, the spices, and local products which, in my opinion, are the true protagonists of Bolivian gastronomy.”

The World Tourism Organization, through its Secretary-General Zurab Pololikashvili, recognized in Federico not just a chef, but a cultural ambassador, someone capable of merging the ancestral with the contemporary.

This appointment is not only a personal recognition but an opportunity for Bolivia to shine on the international stage, showcasing the richness of its gastronomy in every dish, every story, every corner of the country.

Federico’s prestigious restaurant, “El Solar,” located at the corner of Dalence and Nicolás Ortiz streets in Sucre, has become a culinary temple celebrating the essence of Bolivian cuisine.
