Three Bolivian restaurants are among the top 30 in Latin America

The restaurants are Gustu, Phayawi (both in La Paz), and Nativa (Sucre), according to a list by National Geographic.

A recent list of the 30 best restaurants in Latin America, published by National Geographic, highlights three Bolivian establishments that have gained recognition as culinary leaders in the region. The three restaurants featured in the ranking are Gustu, Phayawi (both in La Paz), and Nativa (Sucre).

The ranking criteria include the research behind the flavors offered, the development of new cooking techniques, the history of each dish, the culture behind the preparations, and pairings, according to an article written by Spanish journalist and gastronomy expert Lucía Díaz Madurga.

Diversity in the Selection of Restaurants

This list, based on the author’s gastronomic experiences after years of traveling throughout the region, is not meant to be exhaustive but reflects the author’s view on the destinations visited.

While some internationally recognized restaurants are absent, the selection spans a wide range of options, from fine dining to more spontaneous settings. The list is organized alphabetically by restaurant name.

Among the top 30 are well-known Latin American restaurants like Central (Lima, Peru), Boragó (Santiago, Chile), Fauna (Mexico), and Don Julio (Buenos Aires).

  • Gustu: Located in La Paz, Gustu has become a showcase for Bolivia’s endemic products. Under the leadership of Marsia Taha, this project—founded by Claus Meyer, co-founder of Noma—aims not only to delight diners but also to have a positive impact on the world through its cuisine.
  • Phayawi: At an altitude of 3,600 meters, Phayawi offers a culinary experience that highlights the essence of traditional Bolivian cooking. Chef Valentina Arteaga captures Bolivia’s authentic and homey flavors with dishes that evoke a deep love for her land and culture.
  • Nativa: Located in Sucre, one of Bolivia’s most beautiful cities, Proyecto Nativa is led by Pablo Gumiel. This restaurant, which has also opened a branch in La Paz, offers a seasonal Bolivian cuisine rooted in tradition. Its creative approach aims to showcase the country’s cultural and gastronomic richness, focusing on local and seasonal products.

The list will continue to expand as the author explores new gastronomic destinations across Latin America. However, these three Bolivian restaurants have already established themselves as must-visit spots for those looking to experience the best of the region’s cuisine.
